  • 9 ounces bread flour
  • 1 1/4 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon Maldon salt
  • 10 ounces unsalted butter
  • 12 ounces dark brown sugar
  • 6 ounces white sugar
  • 2 large eggs
  • 3 teaspoons vanilla extract
  • 1 cup dark chocolate discs
  • 1 cup semi sweet morsels

Method
 

  1. Combine the cake flour, bread flour, baking soda, baking powder, and salt in a large bowl.
  2. Cream together the softened butter and sugars in a mixer for five minutes until fluffy.
  3. Add the eggs one at a time, scraping down the bowl sides, then add vanilla extract.
  4. Add the dry ingredient mixture a little at a time until just combined.
  5. Fold the dark discs and semi-sweet morsels into the batter by hand.
  6. Cover the dough tightly and refrigerate for up to 72 hours.
  7. Preheat the oven to 350F when ready to bake.
  8. Scoop quarter-cup sized dough balls onto a parchment lined baking sheet.
  9. Bake for 16 to 20 minutes until the edges are golden brown.
  10. Remove from oven, bang the pan on the counter to flatten slightly, and sprinkle with sea salt.
  11. Let the cookies cool on the pan before transferring to a wire rack.
