No-Bake Greek Yogurt Fruit Tart

Ingredients
  

  • 15 pitted Medjool dates
  • 3/4 cup unsalted cashews
  • 3/4 cup unsalted almonds
  • 1 cup Greek yogurt
  • 2 cups assorted sliced fresh fruit
  • 2 Tablespoons apricot preserves
  • 1 Tablespoon water

Method
 

  1. Spray the bottom of a 9-inch tart pan with nonstick spray and line with parchment paper.
  2. Soak the dates in warm water for 10 minutes, then drain and cut in half.
  3. Pulse the dates, cashews, and almonds in a food processor until a thick dough forms.
  4. Press the sticky dough evenly into the prepared tart pan and partly up the sides.
  5. Spread the yogurt on top of the crust and decorate with fresh fruit.
  6. Mix the apricot preserves with water and brush over the fruit for a glossy finish.
  7. Slice and serve immediately or refrigerate.

Notes

Always line your tart pan with parchment paper for easy removal.
Soak the dates in warm water to ensure a smooth, sticky crust.
