- Spray the bottom of a 9-inch tart pan with nonstick spray and line with parchment paper.
- Soak the dates in warm water for 10 minutes, then drain and cut in half.
- Pulse the dates, cashews, and almonds in a food processor until a thick dough forms.
- Press the sticky dough evenly into the prepared tart pan and partly up the sides.
- Spread the yogurt on top of the crust and decorate with fresh fruit.
- Mix the apricot preserves with water and brush over the fruit for a glossy finish.
- Slice and serve immediately or refrigerate.
