- Preheat the oven to 400°F (200°C).
- In a small bowl, stir together the honey, hot sauce, and lime juice.
- Set aside the hot honey sauce.
- In another small bowl, stir together the salt, garlic powder, chili powder, onion powder, and pepper.
- Place the chicken drumsticks in a large bowl.
- Sprinkle the dry rub all over the chicken and toss to coat all sides evenly.
- Line a baking sheet with parchment paper and arrange the chicken drumsticks on top.
- Bake for 20 minutes to render the fat and begin cooking the meat.
- Use a silicone brush to apply the hot honey sauce all over the chicken.
- Cook for another 10 minutes, then brush with the glaze again.
- Cook for a final 10 minutes until an instant-read thermometer reaches 175°F (80°C).
- Remove the chicken from the oven and let it rest for a few minutes.
- Serve warm with fresh lime slices.
Notes
Pat the drumsticks completely dry with a paper towel before applying the spice rub to ensure the skin gets as crispy as possible in the oven.
