Ingredients

  • 10 chicken drumsticks
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground black pepper
  • 3 tablespoons honey
  • 2 tablespoons hot sauce
  • 1 tablespoon fresh lime juice

Method

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, stir together the honey, hot sauce, and lime juice.
  3. Set aside the hot honey sauce.
  4. In another small bowl, stir together the salt, garlic powder, chili powder, onion powder, and pepper.
  5. Place the chicken drumsticks in a large bowl.
  6. Sprinkle the dry rub all over the chicken and toss to coat all sides evenly.
  7. Line a baking sheet with parchment paper and arrange the chicken drumsticks on top.
  8. Bake for 20 minutes to render the fat and begin cooking the meat.
  9. Use a silicone brush to apply the hot honey sauce all over the chicken.
  10. Cook for another 10 minutes, then brush with the glaze again.
  11. Cook for a final 10 minutes until an instant-read thermometer reaches 175°F (80°C).
  12. Remove the chicken from the oven and let it rest for a few minutes.
  13. Serve warm with fresh lime slices.

Notes

Pat the drumsticks completely dry with a paper towel before applying the spice rub to ensure the skin gets as crispy as possible in the oven.
Apply the hot honey glaze only during the final 20 minutes of cooking so the natural sugars caramelize without burning.
