Homemade Oatmeal Fig Bars

These buttery, wholesome squares feature a naturally sweetened fresh fruit filling sandwiched between a chewy spiced oat crust.

Ingredients
  

  • 1.25 pounds fresh figs
  • 6 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose white flour
  • 1.5 cups quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 0.5 cup plus 1 tablespoon brown sugar
  • 1 large egg
  • 0.33 cup melted butter

Method
 

  1. Remove the fig stems and cut into quarters.
  2. Combine fresh figs and maple syrup in a saucepan over medium heat.
  3. Cook until soft for about ten minutes.
  4. Puree into a sauce using an immersion blender or food processor.
  5. Return to pan over medium-low heat.
  6. Continue to cook until the filling is thick roughly thirty minutes stirring occasionally.
  7. Stir in vanilla extract.
  8. Preheat oven to 350F.
  9. Line a metal baking pan with parchment paper.
  10. In a large bowl measure out flour oats baking powder cinnamon nutmeg salt and brown sugar.
  11. Stir dry ingredients to combine.
  12. Add in melted butter remaining syrup and egg.
  13. Stir wet and dry elements to combine.
  14. Take one and a half cups of the mixture and press it evenly into the pan.
  15. Spread the filling over the crust.
  16. Drop small bits of the remaining oatmeal mixture on top.
  17. Bake at 350F for twenty to twenty five minutes until the top is golden brown.
  18. Cool on a wire rack before slicing.

Notes

1. Let the bars cool completely on a wire rack before slicing to ensure clean, even squares. 2. Store leftovers in an airtight container at room temperature for up to three days.
