Method
- Remove the fig stems and cut into quarters.
- Combine fresh figs and maple syrup in a saucepan over medium heat.
- Cook until soft for about ten minutes.
- Puree into a sauce using an immersion blender or food processor.
- Return to pan over medium-low heat.
- Continue to cook until the filling is thick roughly thirty minutes stirring occasionally.
- Stir in vanilla extract.
- Preheat oven to 350F.
- Line a metal baking pan with parchment paper.
- In a large bowl measure out flour oats baking powder cinnamon nutmeg salt and brown sugar.
- Stir dry ingredients to combine.
- Add in melted butter remaining syrup and egg.
- Stir wet and dry elements to combine.
- Take one and a half cups of the mixture and press it evenly into the pan.
- Spread the filling over the crust.
- Drop small bits of the remaining oatmeal mixture on top.
- Bake at 350F for twenty to twenty five minutes until the top is golden brown.
- Cool on a wire rack before slicing.
Notes
1. Let the bars cool completely on a wire rack before slicing to ensure clean, even squares. 2. Store leftovers in an airtight container at room temperature for up to three days.
