These wholesome and deliciously chewy cookies make the perfect grab-and-go morning meal packed with oats, nuts, and naturally sweet dates.

Ingredients
  

  • 100 g pitted dates
  • 85 ml boiling water
  • 1 egg
  • 3 tbsp maple syrup
  • 3 tbsp coconut oil
  • 1 tsp vanilla essence
  • 1 1/4 cups rolled oats
  • 1/2 cup flaked almonds
  • 1/4 cup desiccated coconut
  • 1/2 cup raisins
  • 3/4 cup almond meal
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon

Method
 

  1. Preheat oven to 350F and line a baking tray with parchment paper.
  2. Roughly chop the dates, place them in a bowl, and pour the boiling water over them.
  3. Let the dates soak for 10 minutes to soften.
  4. Mash the softened dates with a fork until they form a thick paste.
  5. Mix the egg, maple syrup, melted coconut oil, and vanilla essence into the date paste.
  6. Fold in the rolled oats, flaked almonds, desiccated coconut, raisins, almond meal, baking powder, and cinnamon.
  7. Measure out half-cup portions and flatten them onto the prepared tray to about two-thirds of an inch thick.
  8. Bake for 20 minutes until golden brown.
  9. Remove from the oven and allow to cool directly on the baking tray.

Notes

Ensure your dates are extremely soft before mashing to create the best binding paste.
Store leftover cookies in an airtight container at room temperature for up to five days.
