Ingredients
  

  • 8 bone-in chicken thighs
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 4 minced garlic cloves
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Method
 

  1. Whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, Dijon mustard, kosher salt, and black pepper in a small bowl.
  2. Place the chicken thighs in a large bowl and pour the marinade over them, letting them rest in the refrigerator for one to eight hours.
  3. Preheat the oven to 350F and transfer the marinated thighs into a spacious baking dish in a single layer.
  4. Bake for 40 to 45 minutes until the internal temperature reaches 175F, turning on the broiler for the last few minutes for crispy skin.

Notes

For the crispiest skin, pat the chicken completely dry before applying the marinade.
Do not marinate for longer than 8 hours or the citrus acid will break down the meat excessively.
