- Whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, Dijon mustard, kosher salt, and black pepper in a small bowl.
- Place the chicken thighs in a large bowl and pour the marinade over them, letting them rest in the refrigerator for one to eight hours.
- Preheat the oven to 350F and transfer the marinated thighs into a spacious baking dish in a single layer.
- Bake for 40 to 45 minutes until the internal temperature reaches 175F, turning on the broiler for the last few minutes for crispy skin.
