Ingredients

  • 2 tablespoons salted butter
  • 1 tablespoon extra virgin olive oil
  • 2 large white onions
  • 2 large yellow onions
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder
  • 1 teaspoon granulated sugar
  • 0.5 teaspoon fresh ground black pepper
  • 0.5 teaspoon fine sea salt
  • 6 slices bread
  • 3 tablespoons mayonnaise
  • 6 slices Provolone cheese
  • 6 slices Gruyère cheese

Method

  1. Peel and slice the white and yellow onions.
  2. Heat butter and extra virgin olive oil in a large skillet over medium heat.
  3. Add the onions, Worcestershire sauce, spicy brown mustard, Italian seasoning, garlic powder, sugar, black pepper, and salt.
  4. Cook, stirring occasionally, until golden brown and caramelized for about twenty minutes, then set aside.
  5. Heat a clean skillet over medium heat and spread mayonnaise on one side of each bread slice.
  6. Place three slices of bread in the skillet with the mayonnaise side down.
  7. Top the bread evenly with slices of Provolone, followed by the caramelized mixture, and finish with Gruyère.
  8. Place the remaining bread slices on top with the mayo side facing out.
  9. Cook until the bread is golden brown and crispy and the cheese is melted for two to three minutes per side.
  10. Slice the sandwiches in half and serve immediately.

Notes

If your onions are drying out before caramelizing, add a tiny splash of water to the pan to deglaze and continue cooking.
Using mayonnaise on the outside of the bread yields a crispier and more golden crust than butter.
