Method
- Peel and slice the white and yellow onions.
- Heat butter and extra virgin olive oil in a large skillet over medium heat.
- Add the onions, Worcestershire sauce, spicy brown mustard, Italian seasoning, garlic powder, sugar, black pepper, and salt.
- Cook, stirring occasionally, until golden brown and caramelized for about twenty minutes, then set aside.
- Heat a clean skillet over medium heat and spread mayonnaise on one side of each bread slice.
- Place three slices of bread in the skillet with the mayonnaise side down.
- Top the bread evenly with slices of Provolone, followed by the caramelized mixture, and finish with Gruyère.
- Place the remaining bread slices on top with the mayo side facing out.
- Cook until the bread is golden brown and crispy and the cheese is melted for two to three minutes per side.
- Slice the sandwiches in half and serve immediately.
Notes
If your onions are drying out before caramelizing, add a tiny splash of water to the pan to deglaze and continue cooking.
Using mayonnaise on the outside of the bread yields a crispier and more golden crust than butter.
