Instructions
 

  • 1. Whisk wet ingredients: Place ricotta, eggs, sugar, milk, vanilla, and vinegar in a bowl. Whisk vigorously until mostly smooth.
  • 2. Add dry ingredients: Scatter flour, baking powder, baking soda, and salt over the wet ingredients. Whisk until just combined.
  • 3. Heat pan: Heat a non-stick pan over medium heat. Brush lightly with melted butter.
  • 4. Cook pancakes: Pour 1/4 cup of batter per pancake. Cook for 1.5 minutes per side until golden brown.
  • 5. Serve: Serve the Fluffy Ricotta Pancakes with macerated strawberries, butter, and maple syrup.

Notes

Don't Overmix: The key to fluffy pancakes is a lumpy batter. Mix only until the flour is just incorporated.

Full-Fat Ricotta is Best: For the richest flavor and most tender texture, use full-fat ricotta cheese.

Pan Temperature: Adjust the heat as you cook. If pancakes are browning too quickly, turn the heat down.

Keep Warm: To serve everyone warm pancakes at the same time, place cooked pancakes on a baking sheet in an oven set to 50°C / 125°F.
